The the likes of Vega Sicilia putting Toro on the map well and truly with Pintia, other smaller producers have started to hit their stride with Tinta de Toro or Tempranillo as we know it. The wines are dark, deep and rich and full bodied but still retain the tell tale Tempranillo characters of bright fresh acidity, fragrant red fruit and a certain elegant sleekness in the palate with fine tannins. Winemaking: 45, 70, and 120-year-old ungrafted vines yielding 18 hl/ha. 5-7 days cold soak, fermentation begins with natural yeasts. 10-15 days fermentation / maceration with regular pumping over. Malolactic and 8 months aging in French barriques, 50% new.
