The Producer
I have known Jacques and Jeanine Pons since 1988. They are the most wonderful family dedicated to the traditions of a historic region. Faugères was formally a bay as the Mediterranean coast was 25 km further into France than today. The band of soil at coast level has left the most perfect mix of schist, sand and mineral deposits, along with a myriad of fossil remains. This is ideal for grape growing. Sprays are rarely used (One acaricide spray since 1990!) and vines share the soil with wild flowers and herbs. It is a beautiful and balanced environment.
Jacques grapes are his daughters (he has one son). He has built a device to lower them gently, and intact, into vats prior to fermentation. Crushing follows ferment so as to conserve the natural flavours.
The red wine is very long lived. The rosé was originally a bi-product of the great red. Following demand for is high quality pink he has started to make it ‘on purpose’. There is a solid range of varietal Vin de Pays.
Jacques has begun to use white grapes (just 1 or 2%) to enhance the aromas of his red.
The Wine
Once again, Jacques Pons offers a classy Rosé that stands head and shoulders above its competitors. Elegant, with an ultra fresh and clean acidity giving the rose wonderful, defining structure. Attractive and refreshing, with soft, strawberry fruit style.
