The Producer

With his organic philosophy and respect for the land, Sylvian Fadat of Domaine D'Aupilhac has quickly built a reputation as one of the region’s star producers. The quality of wines from the Languedoc continues to improve; elegance and power are now harmoniously married in Montpeyroux's top wines. White wines are made from blends of Marsanne, Rolle, Roussanne and Grenache Blanc, while the red wines are an assemblage of Mourvèdre, Syrah, Carignan, Grenache and Cinsault.

The Wine

A large part of the vines grow on south-west facing "terraces" on a site named "Aupilhac". They are mainly Mourvèdre and Carignan, but some Syrah, Grenache and Cinsault grow there too. This 2006 blend is made from old vines that produce very ripe grapes and small yields - these are the only vines that don’t require vendanges en vert. This is a powerful wine with aromas of ripe black fruits, liquorice and smoke but also possess wonderful freshness and purity.
