Description
The Asolo Prosecco Superiore comes from low yielding parcels of vines from the Asolo hills – one of the two top quality designated production zones for Prosecco. Asolo covers only one sixth the area of Valdobbiadene Conegliano and although it has a potential production of under one fifth of its larger sibling with actual production under 2% by volume. Farmed organically the grapes undergo a partial maceration and are then fermented incredibly slowly to protect the structure and aromatics of the grapes. It is full of aromas of white pepper, apple and white fruits.
