From traditional Tuscan producers with a very modern approach, the Castellare vineyards are located in an amphitheatre on the hills of Castellina in Chianti, at an altitude of 470 meters above sea level and with mainly calcareous soil.
This Chianti Classico has an intense, deep ruby red colour with a nose of cherry and violet, together with notes of licorice and vanilla. On the palate it has rich leather and black cherry tones, with soft and accessible tannins and a fine streak of refreshing acidity to round it out.

Castellare di Castellina was born of the union of four estates (Castellare, Caselle, San Niccolò and Le Case) on the initiative of Paolo Panerai, with the aim of producing wine of the best possible quality. This was in the 1970s, when the so-called Renaissance of Italian wine had begun. A Renaissance to which Castellare made its own contribution with a combination of tradition and innovation.
Castellare di Castellina covers 80 hectares with 33 hectares under vine at around 370m above sea level. They sit in a natural south-east facing amphitheatre, providing excellent sun exposure and good water drainage. Vines per hectare are kept low for maximum fruit quality; in limestone, marl soils with a smalll amount of clay; this produces wines with great structure and intensity of fruit. Following the innovative direction of the Chianti and the University of Milan, Castellare introduced steel vats for vinification and were one of the first to introduce the use of small french oak barrels for maturation. In keeping with the concept of traditional Tuscan methods they didn’t do away with their old concrete tanks but they glazed them (glazed concrete tanks have the ability to make the various components of the wine more cohesive, more one single entity if kept in the tanks for a few months before bottling). They also managed to re-graft their vines with the best scientifically produced clones of Sangioveto for their particular terrior. As Sangiovese is a particularly sensitive vine to climate, terrain and terrior no synthetic chemicals are used in the Castellare vineyards. This respect for nature and organic farming is reflected by the labels, which every year carry a drawing of a different bird found to be increasingly rare due to the indiscriminate use of poisons and herbicides in vineyards.
