Daniel has always believed in cellaring wines himself to ensure they leave the cave in good order and with a bit of bottle age. As well as that wines are aged extensively in tank and, importantly, with the fine lees. These help to keep the wine and to add an extra dimension of flavour.
The 2018 is one of the more intense, with almost candied citrus fruits floating on the tongue and balanced by the crisp minerality that is the hallmark of great Chablis (and too often lost these days!). Outstanding and delicious summer white, it does go very well with lighter meat dishes as well as many vegetarian and, of course, fish.
