Description
From an ancient estate in Chablis, the Defaix family have been making wine for 4 centuries. The estate is compromised of 28 hectares of Chardonnay grown on Kimmeridgien soil characterised by its fossilised oyster shells. It is blessed by a fantastic south east exposition on a steep slope, protecting the vines from frost and providing them with the benefits of the early morning sun.
For Chablis drinkers, 2021 was a classical vintage with vibrant acidity and the strong terroir influence that makes Chablis so distinctive. Aged for a year in stainless steel, the fine lees are stirred once a month to create a rich yet pure Chablis.
