Description

Only the juices from first pressing are used. Natural settling, no filtering, full malolactic fermentation, low dosage ( 7g/l) and minimal use of sulphur. 5% of the wines are then matured in barrels for 1 year to enrich the cuvée. The red grape Pinot Noir constitutes at least 80% of the blend. Its white juice is sought after not only for its structure but also for its very characteristic fine notes of red fruits. An elegant, aromatic wine with a rich aroma of stone fruits such as white peach. A spicy hint announces a powerful and complex palate. A vinous Champagne of lovely complexity with a characteristic note of quince jelly.

For one of Champagne’s most forward-thinking producers, Drappier has no shortage of historic roots. An eighth-generation family business, the house was founded in 1808, and occupies magnificent twelfth-century cellars built by Cistercian monks. Indeed, it was members of this monastic order who travelled up from Burgundy to the Aube region nearly a millennium ago, and planted the early ancestor of Pinot Noir. Today, Drappier owns fifty-five hectares of vineyard around the town of Urville, with another fifty hectares under contract in the Côte des Bar, Montagne de Reims, and Côte des Blancs.
