Aged for 6 years in solera and then bottled straight off the lees with only a minimal cold stabilization. The time spent on the lees is longer than usual for a fino, making it an unusually rich and textured fino. It is dry, sharp and delicate with bright fruit. Flavours of yeast, dough with hints of brine. This fino should be served cold around 7°C. Perfect for Sherry lovers looking for a refreshing yet complex example of the style. It is the ideal pairing for a bowl of green olives and some toasted almonds.
