The finest of Pouilly Fumés. Some years ago, André Dezat bought 4.5 hectares of particularly well-sited vineyard near Tracy, which has been expanded a little each year to a total of 15 hectares.
Low yields and assiduous care taken both in the vineyard and cellars ensure a great wine. A pneumatic press is used and a long alcoholic fermentation is carried out in stainless steel at between 16 °C to 18°C and aged on its fine lees for 2 months.
